2004 Chambourcin

2004 Jubilee Chambourcin

Our first handpicked harvest! A delicate, fresh, medium bodied wine with typical Chambourcin characteristics of spice and lingering raspberry fruit, enhanced with a touch of old american oak.

Complements a wide variety of meals, especially a lamb or beef roast, or anything spicy such as  indian or asian cuisine. Serve either at room temperature, or lightly chilled. Enjoy  now, or with additional cellaring will peak between 2008-2011.

We have chosen quality screw closures to maintain the integrity of the wine.

2008 White Chambourcin Rose

2008 Jubilee White Chambourcin RosÉ

2008 was a very wet year and Chambourcin the variety performed well.  Hand picked and selected bunches were pressed and free-flowing juice was collected to produce the soft pink rose colour of this wine.

Clean fresh fruity aromas of strawberry, raspberry & lemon with a palate of raspberries and lingering citrus.

Sweetness: Off-dry (25 g/l residual)

2008 Chambourcin Rose

2008 Jubilee Chambourcin RosÉ

2008 was a very wet year and the Chambourcin grape variety performed well.  Hand picked and selected bunches were pressed and free-flowing juice was collected to produce this purple red rose.

The wine has fresh fruity aromas of raspberry, cranberry & cherry with a clean fruit driven palate.

Sweetness: Medium (41 g/l residual)

2006 Chambourcin Rose

2006 Jubilee Chambourcin RosÉ

Another dry year where our irrigation system was turned off and the grapes were reliant purely on the limited rainfall for survival. This resulted in lower yields, but very concentrated fruit flavours. The Chambourcin grapes were crushed, and the juices allowed to free run, to produce a softer, fruitier wine.

Vibrant in colour, this Rosé has raspberries, strawberries, and spice aromas, with a crisp refreshing palate, and a touch of sweetness.

A versatile wine which complements a wide variety of meals. Serve Chilled...and enjoy!

2005 Chambourcin Rose

2005 Jubilee Chambourcin RosÉ

Drought conditions and a huge lightening strike helped intensify the flavours and sugar levels of our Chambourcin grapes for our 2005 Vintage. Handpicked in the early hours of the morning, the whole berries were pressed off their skins, and cold fermented by lunchtime.

The resulting wine is a fresh, youthful, sweet mix of berry flavours with a crisp lingering finish. The nose offers lifted raspberry and strawberry jam characteristics, with a hint of spicy cinnamon.

Complements a wide variety of meals, especially seafood, chicken, and asian style cuisine. Serve chilled. Should be consumed without extended cellaring to maximise freshness.

2008 Sauvignon Blanc

2008 Jubilee Sauvignon Blanc (Orange Region)

This fruit was sourced and hand picked from a single vineyard in Orange, NSW, and cold fermented in stainless steel using an aromatic yeast strain.

This wine shows clean fresh green grass and capsicum on the nose with a beautifully passionfruit and kiwifruit palate.

2004 Chambourcin Port

2004 Jubilee "Drunken Bee" Chambourcin Port

As we were handpicking these luscious over ripened Chambourcin grapes in early autumn, we were surrounded by thousands of swarming bees, whom were busily sharing in the sticky sweetness of the warm grape juices, as the bunches were removed. Luckily not one picker was stung, even as they crawled drunkenly out of our buckets.

This limited release estate port is a deep ruby red colour, with hints of  blackberries and mulberries, matured on new american oak. A sweet, fruity fortified wine with a bit of a “Sting”.

Although young, it can be enjoyed now, however, it will benefit by further cellaring of 4-5 years. Enjoyed best after a good meal, by the fireside with friends.
